Entrepreneurial Mum owner and chief baker at I Love Cheesecake
Laura Merriman (or better know as cheesecake Laura)
I grew up in Newsome, Huddersfield and have always been a keen baker. I would spend my lunch breaks reading cookery books, instead of playing!
After studying for a masters degree in Sustainable Development in the beautiful Herefordshire countryside, I developed a greater understanding of the intrinsic links between farming, local food and our environment.
I’d love a stroll around farmers markets, then coming back to the kitchen baking, testing recipes, making things up as I go along . With this grew a passion for local quality food, with a heart.
After taking timeout to look after my two children I wanted to turn my hobby into a business. With cheesecakes being one of my families favourite desserts and seeing the success of a similar business whilst on Holiday in Anglesey, ‘ I Love Cheesecake’ was born in 2013
50 flavours later, I’m making individual cheesecakes from traditional to quirky, a flavour to tantalise every taste bud! Our cheesecakes are perfectly chilled and packed with flavour. All my cakes are made with Longley Farm Soft Cheese and Fresh Cream and I often make use of fruit from my garden.
I am passionate about supporting my home town of Huddersfield, You’ll always find me on Upmarket Sunday and often support local events at The Wildlife Trust’s Stirley Community Farm. I am also an active member of Tea and Tarts Women’s Institute, which is full of entrepreneurial, inspirational women who have helped motivate and support me in starting up on my own.
My plan was always to get the cheesecakes into West Yorkshire cafes and restaurants. I am proud to now be supplying The Sons of the North.
